During the closures, we were not only working on Zsidai Home, but also on one of Roy's old childhood dreams: to develop our own ice cream.

 

Of course, you ask, why ice cream..

 

When we started working with Jamie, we knew that he had very strict criteria to meet on the ingredients front, so of course ice cream. Powdered ice cream was a thing of the past, but at the time we could only find one supplier who could meet the requirements.

 

We felt that we could do better, but we just couldn't find the time.

 

Then the pandemic came and stopped us completely. We had the time and we realised we had our own pastry factory, our own bakery, so our two executive chefs, Vernon Strachan and Megraj Chavan, started experimenting, because they had the time to do it at the same time. We knew what flavours we wanted, we'd tasted expensive and really perfect ice creams, and we wanted to make them at home.

 

Meghraj says it's a process where you can never be sure of finding the perfect recipe. It took us a long time to develop, because we wanted to create the best ice cream possible, using local ingredients as much as possible.

 

Ice cream has become a love and a freedom for us during the closures. It was where our love for the craft, our passion for the craft and our creative freedom could really show.
