It was Péter Zsidai's idea to open a Hungarian restaurant in order not to compete with Pierrot. Not "Hungarian", but a bistro with the flavours of Hungarian bourgeois cuisine.

Pest-Buda Restaurant was taken over by the Zsidai Group in 2010 when the previous tenant cancelled the lease of the restaurant, which had fallen into disrepair.
The renovation was not easy due to the historic character of the building.
Roy was studying and working in the USA in 2006, when he came across an article about the renovation of the historic Gozsdu Courtyard in downtown Pest and the creation of an entertainment district.

Emile saw the solution in bringing in an external partner with a background in gastronomy and convinced the Kempinski's top management. Back in December 2012, he approached Roy to sit down and talk.

A lot of meticulous work preceded the opening, especially on the design side. The 11 rooms of the Baltazár Hotel have a unique design, no two rooms are the same.

The principle within the group is that we only open a new place if we can create something exciting, original and niche in the area and if we can shape and develop the environment with it. This was no different in the spring of 2014, when Spíler Shanghai opened.
